A much-loved institution, Bittersweet Pastry Shop & Café recently unveiled its second location in the heart of Pilsen where they’re building upon the menu with authentic Mexican goods.

Owner, Esther Griego joined us to share a carnitas quiche recipe.

Quiche Recipe

One Large Onion

1 Tablespoon oil 

6 tablespoons Cream Cheese

Two sprigs fresh tarragon

6 Eggs

1 1/3 cups Heavy cream

1 1/3 Cups Half & Half

4 oz shredded Gruyere

Salt and Pepper

1lb pre-cooked Carnitas 

Prepared pastry shell

Step 1 – Creamy Caramelized Onions

Roughly slice the onions.

Heat the oil in a heavy-bottomed pan to medium hot. Put onions in pot and stir occasionally until starting to brown, about 30 minutes.

Turn off the heat and add the cream cheese, allowing it to melt. Stir until combined. Add tarragon, salt, and pepper.

Step 2 – Custard

Blend eggs, heavy cream, gruyere salt and pepper. Strain.

Step 3 – Assemble
Press creamy caramelized onions into the base of the shell.

Top with the carnitas followed by the Gruyere.

Pour custard over the ingredients.

Bake at 300° for 40-45 minutes
